good&cheap

the other night nik came up with a fantastic dinner - it took only 5 minutes start to finish. plus, i can't imagine it was more than a buck for each person's meal.

he fried up some hash browns, then in the skillet, cracked a few eggs on top and scrambled them into the potatoes. he topped it with cheese and hot sauce, and served it in a bowl.

i'm not going to post a pic because it really doesn't look all that special. in fact, before we started eating it nik apologized to me and said that it may not even taste good.

fortunately he was wrong. 

meals like this remind me of when nik and i first started out and the grocery bill became a game to me. i was the queen of cheap at trader joe's. alas, nik got tired of tofu {and really put his foot down when it came to tempeh}, and so i started branching out. 

but! i'm going to try to remember some of our favorites that he's not permanently scarred from. and! i was hoping that you might have some good&cheap meals to share.
